Cold Soy Ramen & Crispy Tofu

Craving something refreshing, high protein, healthy and packed with flavour and nutrient that’s as little cooking as possible? Well look no further than my: Cold Soy Ramen and Crispy Air Fryer Tofu!

What none of you will have known, is I used to be lactose intolerant and grew up having a glass of warm soy milk before bed each night instead of the usual stuff! So I’ve grown up with it my whole life and it has a special place. 

This particular cold soup, has FIVE different soy products in it: tofu, soy sauce, soy milk, miso and soy sauce. I love a cold soup because you can taste the flavours more than when it’s hot in my opinion!

Blocks of extra firm tofu

Tbsp paprika

Tbsp cornflour

Tbsp salt

Tbsp white pepper

Tbsp garlic powder

Tbsp sesame oil

ml unsweetened soy milk

Lemon, juiced
1
tsp chicken or vegetable stock
4
Oyster mushrooms
2
Tbsp soy sauce

g
Cooked and shelled edamame beans
Cooked and cooled noodles of your choice
Desired amount of kimchi
Handful of finely sliced spring onions
Desired amount of pickled ginger
Chilli oil of your choice

Method

Coat tofu in cornflour and air fry for 15 mins 200 degrees

Halve and criss cross oyster mushrooms, cook each side until brown then add soy sauce and turn off heat once done

Make cold miso soy soup, add miso, soy milk, stock/powder, lemon juice, ice cubes and a pinch of salt (and optional chilli) in a blender

Blend until completely combined and taste for further seasonings!

Serve together with all toppings, cooked and cooled noodles of your choice, desired amount of kimchi, handful of finely sliced spring onions, desired amount of pickled ginger and chilli oil of your choice
