Our creamy Passionfruit Chia Soy Pudding is packed full of good-for-you ingredients. Chia seeds and soy milk add a protein boost while passion fruit makes for a healthy tropical twist (it contains vitamin C, vitamin A and antioxidants!). It’s quick to prepare and can be served as a dessert or stocked in the fridge as an easy snack.

Method

In a bowl, combine chia seeds, soy milk, maple syrup and vanilla extract. Whisk until well combined, ensuring there are no clumps of chia seeds.

Chill the mixture in the refrigerator for at least 1 or until the chia seeds have spayed up the milk and the mixture has thickened.

Divide the chia pudding between 4 jars or glasses. Top each serving with a dollop of coconut/greek yogurt.

Cut the passion fruits in half, scoop out the flesh and distribute evenly among the jars or glasses.

Sprinkle granola over the top of each serving.

Serve chilled and enjoy!
