Method

Sift flour, baking powder, salt and sugar together in a large bowl. Make a well in the centre and add soy milk, egg and melted butter; mix the batter until smooth. Add 60g of thawed berries after mixture is combined.

Heat and lightly oil a pan or griddle over medium-high heat. Pour or spoon the batter onto the pan (about a ¼ cup for each pancake). 

Cook pancakes until bubbles form and the edges look set, about 2-3 minutes. Flip and continue cooking for another 2-3 minutes until the pancake looks golden brown on both sides.

Top with rest of berries, icing sugar and maple syrup. Also add any other toppings you wish!
