This side dish is packed with healthy, colourful summer vegetables. It’s simple to make and a staple at any BBQ. Want to make it vegan? Just leave out the feta!

Heat vegetable oil in a skillet over medium heat.
Add edamame, corn, red onion, garlic powder, salt and sauté for 4-5 minutes, or until the corn is golden and the onion is translucent.
Add bell peppers and sauté for another 1-2 minutes, or until peppers are slightly tender.
Add edamame and stir until well mixed. Then remove from heat.
Stir in feta cheese and garnish the dish with dill. Then dig in!
